Belgian Vs. American WafflesThere are two main types of waffles: Belgian Waffles (also known as Belgium Waffles) and what most of us know as American or Western Waffles. A true Belgian waffle is thicker, crispier and fluffier than an American waffle because it uses yeast in the batter recipe. Many American cooks have gone from using the more traditional yeast recipes to newer and faster techniques. Baking powder & baking soda are more commonly used as they are faster, more reliable, and achieve similar results. An American waffle does not rise as high as a Belgian Waffle, but are quicker and easier to make. Belgian Waffles are perfect for Dessert Waffles, because of the deep wells created by how high the waffles rise. It is perfect for cradling pockets of your favorite dessert sauce, allowing it to soak in to the golden toasted waffle. Waffle BasicsHow to Serve your WafflesWaffles are best eaten as soon as they are ready from your waffle iron. That way they are nice and crispy. But if you can’t eat them right away or you are making breakfast or brunch for a large group, the best way to keep them is to place them in a low heat oven (200 degrees F) for up to 5 minutes. Just place them on one of the wire racks inside the oven. Try to avoid stacking the waffles on a plate with a dishtowel. They will still taste good, but will lose their crisp texture very quickly. What about the leftovers? Freeze them! Just let them cool on a wire rack on your kitchen counter. After they are cool, place a paper towel or wax paper in between and place them in a freezer bag. You can then thaw them out and place them in a wide slot toaster or toaster oven. You can also reheat them in oven or microwave as described below. Conventional Oven: Reheat waffles in a preheated 400-degree oven for about 5 minutes if frozen and 3 minutes if refrigerated. Microwave Oven: Place waffles on a paper towel or cloth towel and reheat waffles on high setting 40-45 seconds if frozen or 20-25 seconds if refrigerated.
